Right now for some reason when someone tries to load via an IP they get a default of the subdomain from one of my clients. How can I change the default site that is displayed for situations like this?

Yes this does happen, think you will have to add some apache config manually to sort this.
Create a new conf file in sites-available, insert required config and create link from sites-enabled to the file in sites-available.
