Courier's SMTP service shouldn't be running. Are you sure you removed the other Courier packages?

You can try running "alternatives --display mta" and see what CentOS is trying to use for mail.

Zur Zeit ist die `best' Version /usr/lib/courier/bin/sendmail.

it's a bit strange... but absolutly everything is working. I created a new mail user, sent a mail to him from inside and outside, and everything was fine....

another strange thing:

if i install postgrey over yum, it doesn't run on port 60000 - it opens a socket.

So you have to change
check_policy_service inet:127.0.0.1:60000,
to
check_policy_service unix:postgrey/socket,

in /etc/postfix/main.cf
