Hast Du auch alle Dienste neu gestartet?
/etc/init.d/postfix restart
(auch mit amavis, spamassassin, ...)

Schau mal in /var/log/mail.log wie die Mail angenommen wurde und ob sie an amavis weiter gegeben wurde. Ist Amavis während des Prozesses involviert?
