Bypass (disable) Mail Service

Hi,
i would like to use my own Mail Server (Zimbra) for domains hosted on ispCP.
What is the best way to configure ispcp to forward all local generated Mails to a smarthost?
Idea 1: overwrite postfix configuration-files
Idea 2: overwrite postfix "database" files

FAQ again: which files get overwritten (update or customer creation)
