If your dovecot version does not recognize the -s parameter it must be quite old. If you are on debian, I would use nothing before lenny (at least on a new install), and at least dovecot 1.0.x
Dovecot Version 1:1.0.15-2.3+lenny1 ISPomega 1.0.3, i've gone through all the steps in your Howto once again but same errors, whats the easiest way to back to courier should all else fail?

I have installed ispcp a lot of times and never find this problem, there must be something wrong with your setup.
You could try to enable more verbosity on dovecot or start from scratch again ..
You could ignore this -s parameter too, it is basically to subscribe you to the mailboxes that are created (such as junk and so on)
