Vermutlich dürfte AWstats dynamic schon etwas helfen...

Aber dein Hauptproblem klingt eher danach, dass dein System in die Knie geht sobald die I/O zu gross ist. Dies könnte wie bereits angetönt am Speicherkontroller oder aber auch am Kernel liegen...

(Wir hatten ein ähnliches Phänomen auf einer CentOS Maschine, da war es die Kombination Kernel/Speicherkontroller (2.6.18-* und AMCC Raid (3ware))
